Broccoli and Aerobics

Let me just suggest that if you ever eat Cream of Broccoli soup...pass on Aerobics!  Although, I'm pretty sure it was pretty hilarious to watch me trying to hold in toots while working out on a balance ball. 

On that topic I loved working out on the balance ball.  This was my first experience and I really enjoyed it.  I could even do a good plank on the ball note: I can't do a standard plank to save my life.  Because of the rain (3+ inches) we only had about 10 ladies at aerobics compared to the normal group of 30+.  That was nice b/c it was more personal and fun.  I really enjoy our instructor (although I can't remember her name for the life of me)...we will call her "Lisa" because she looks like a Lisa to me.  She pushes me just enough to make me try something I feel I can't do.  I plan to continue with this program as long as possible.  $40 for 10 weeks is a bargain based on the fact that we get together 2 times a week and it isn't a joke class.  It is serious and I'm sweating within 5 minutes and leave with most of my muscles aching, a good ache. 

Tonight for dinner I concocted some broccoli cheese soup.  Mostly b/c it is the best way to get my boys to eat broccoli.  It was pretty yummy. Brief Recipe Below:

Ingredients:
  • 2 tbsp EVOO
  • 1/2 yellow onion, chopped
  • large bag of frozen broccoli florets
  • vegetable stock
  • one small brick of light Velveeta (I know processed but so YUM) and the only thing with any real calories in this whole recipe
  • one can of 98% fat free cream of celery soup
I softened the onions in the EVOO then added the broccoli to the pot.  Cover the broccoli with stock and bring to a boil, cover and simmer for 10 minutes.  Add the cheese and soup, until melted.  Using stick blender, I buzzed it for a bit to break up the broccoli.  Then simmer for 5 minutes and serve.  YUMMM!

That was dinner tonight...I have no idea what we'll have tomorrow and this is a big deal b/c I always know what is for dinner at least 2 days in advance.  We shall see...I'll be better planned next week...I just decided this vegetarian thing yesterday so I didn't plan as well as I normally would.
