Weekend Bliss

I love spending the weekends with my kiddos :)  Saturday I hit the road with Terri for a 2 miler...we are back to C25k in preparation for the Komen Race (2 weeks) :)  It kicked my butt!  Meals Saturday were pretty standard.  Veggie Sausage and GM (this is the last week of the game...actually tonight, Sunday...is the last day) WHEW!  DONE...anyway back to Saturday.  I had a big salad for lunch...then I had a bowl of Chili before GNO.  Nothing spectacular :) 


After Dom's Soccer game, we went to get their Halloween costumes and to see some doggies at the shelter.  We also confirmed the fence price and contractor.  He'll start working on the fence within the next 2 weeks! YAY!  After all our errands I hit the grocery store to do this week's shopping and had to hurry home to get ready for GNO!!!  I love Girl's Night Out...some months we have 4 girls (like last night) and some months we have 10. 

Last night was Me, Meg, her BFF Loni and La.  We went to the Lodge in Bel Air...LOVE THIS PLACE.  I had way too many Mango Crushes and the Tuna appetizer with Mango Salsa and Meg gave me her veggie skewers :)

After dinner and laughing with the girls...La and I decided to stay and play in the bar area...they had a DJ!  We danced and I had 3 beers.  Man I got skunked...so much so that La had to bring me home and I had to leave my car at the restaurant, whoops.  I also got sick Saturday night (boo!!!)  I'm such a light weight.  The bad news is that I felt hung over all day today (Sunday)..the good news...I didn't retain many of the calories I consumed (silver lining) LOL. 

I survived and after some sleeping in and lots of water...I felt much better.  We had to get my car and I took the boys to get a hair cut :)  Dom is so damn cute!

DJ picked up Sushi for our lunch...YUM.  What I really wanted was a huge cheese steak sub (there is just something about eating greasy food when you are hung over that makes me feel better LOL)...but the sushi was a much better choice.

After Sushi I started cooking for the week.  I made my Chana Masala and I found a recipe for Breakfast cookies...they turned out perfect!

They are soft and chewy...Mmmmmmmmmmmmm.  Mason LOVES them and he is really who I made them for.  Below is the recipe:

1/2cup mashed banana (about 1 large)
1/2cup chunky natural peanut butter (unsalted and unsweetened)
1/2cup honey
1teaspoon vanilla
1cup rolled oats
1/2cup Gold Medal® whole wheat flour
1/4cup mini chocolate chips
2teaspoons ground cinnamon
1/4teaspoon baking soda
1/2cup dried cranberries or raisins


1. Preheat oven to 350°F. Lightly coat two cookie sheets with cooking spray; set aside. In a large bowl, stir together banana, peanut butter, honey, and vanilla. In a small bowl, combine oats, flour, cinnamon, and baking soda. Stir the oat mixture into the banana mixture until combined. Stir in dried cranberries and chocolate chips.
2. Using a ¼-cup measure, drop mounds of dough 3 inches apart on prepared cookie sheets. With a thin metal or small plastic spatula dipped in water, flatten and spread each mound of dough to a 2¾-inch round, about ½ inch thick.
3.  Bake, one sheet at a time, for 14 to 16 minutes or until browned. Transfer to wire racks to cool completely. Store in an airtight container or resealable plastic bag for up to 3 days or freeze for up to 2 months; thaw before serving.

I doubled this recipe and got 12 HUGE cookies :)  I love that it is sweetened with Honey and has all natural whole grains...so much better than anything I could buy in a store and really easy to make to boot!

After my cooking/baking adventures...I took an hour long nap then we all went to Dom's 2nd soccer game of the weekend.  After the game, we went to Famous Daves for some BBQ...I was still craving something a little bad for me :)  I ended up getting some roasted corn fritters and a side salad.  The salad was really yummy and I only had 2 of the fritters which were served with honey...Mmmmmmmmm  I also had a few of the kid's fries.  That did it and hit the spot

Note...dipping your fork into the dressing really does help to cut down on the amount of dressing you use...I dipped my fork and I only used like 1/4 of this tiny ramekin of blue cheese dressing (I told you I was feeling naughty) LOL

 I'm just chillin for now...I still need to go down and pack the boys lunches.  Tomorrow starts my short work week and I'll also celebrate 8 years of wedded bliss with my Hubby!
