Last night for dinner was SPAGHETTI!! This is a big deal b/c we haven't really eaten pasta in my house in about 3+ months. CRAZY! I used whole grain pasta and my sauce from scratch (super simple)...here is what I did:

- 5 cloves of garlic (through press)
- 1/2 small yellow onion
- 2 sweet Italian turkey sausage links, squeezed from casings
- 1/2 C. White Wine (optional)
- large can crushed tomatoes
- 1/4 C. parm cheese
- 1 tsp garlic powder
- 1tsp onion powder
- 1 tbsp oregano
- 1/4 C. Splenda
- In large skillet saute onions til soft and add garlic and sausage.
- Brown the sausage like it were ground beef (squeeze it from the casing).
- add wine and bring to a boil, simmer for 10 minutes til reduced by half.
- Add the remaining ingredients bring to a boil then cover and simmer for 20 minutes.
Pretty healthy, I don't know the stats (nor do I care)
I'm getting ready to start a great book: The Diet Survivor's Handbook:...by Judith Matz and Ellen Frankel. I can't wait to read it. It is all about creating a healthy relationship with food and intuitive eating which I'm siked to learn more about!!!
I want to lose 9lbs by June 1st...pushing it! But we'll see..
