My leg muscles have felt completely shredded since Monday morning...so bad that I almost fell down the steps because my thigh muscles gave out half half way down each step - LOL. I didn't fall but I minimized the steps most of yesterday and Monday. This morning was day 2 of bootcamp - 5am alarm - at the gym by 6am. Jonathan and I were joined by another teammate in our little circle of hell :) Jonathan and I were discussing that our legs were completed shredded and Alicia (our trainer) said "sounds like an arm day"... I can honestly say that my legs feel GREAT! compared to my core and arms. She killed us today with core work...my abs feel really sore but REALLY GREAT too!!!! I know this is pain but it is good pain and on my walk back from the gym this morning I was thinking how strong I'll be at the end of these 4 weeks!!! SO EXCITED.
Plus since I'm back on the healthy eating wagon...I just know I can get the rest of this weight off this year. Come on goal weight!!! What is my goal weight?? Well I would love to be 160 by the end of this year but that would entitle about 40lbs more to go. I would honestly be very happy with 170. at 170, I'm in a 10/12 and feel fit. Then I can work on the rest through 2013. Ideally at some point in my life (be it 10 years from now)...I'd like to weigh 150. At 170, I am going to have my belly "done", which will probably take off a few more lbs and definitely a bunch of inches :) YAY!!
Alright...time to get to my food yesterday :) Do you see my cute little packed lunch? Watermelon, Salad, Soup, Carrots/Hummus, and Zucchini Quinoa bites :)
I did have my oatmeal first but if you've seen one bowl you've seen them all.
Then around 10am I had these little yummy bites :)
Zucchini Quinoa bites:
(modified from a recipe)
Ingredients:
1 C. Cooked Quinoa (cooked with chicken stock)
2 eggs (will do 2 eggs with 2 egg whites next time)
1/4 C. Shredded Cheddar Cheese
1/4 Cup sauteed onions/zucchini (in EVOO)
Salt and Pepper to taste
I sauteed the zucchini and onions for another recipe so I just used a quarter cup of that combo.I mixed everything together and scooped into a mini muffin pan. My recipe filled one mini muffin pan. I baked them at 375 for 10 minutes and voila! Perfection. Note: be sure to spray your pan with Pam or something because the one cup that didn't get sprayed didn't pop out like the rest.
These little buddies are SO GOOD and I had 5 for my 2nd breakfast :)
My DOLE salad greens had a bunch of dirt in them...YUCK. I had to wash off every leaf and because I didn't have a spinner...the leaves were all soggy but that was ok. I made this salad with some feta, watermelon, tomatoes and some balsamic. It was just ok :( I don't think I'll put watermelon on my salad anymore...I like watermelon all by itself :)
Snack was Hummus with some baby carrots and wheat thins...Mmmmm
My monster resembled pea soup...LOL
And dinner was my quinoa salad with some feta and my beloved coconut curry tempeh that I was desperately searching for...which I found at Harris Teeter Monday night :) YAY!!!
Honestly...this is the stuff that I tried at my cousin, Danielle's house, this weekend. It was SO YUMMY and I love the texture of the tempeh. YAY Soy! (here is the package in case you are interested)
After I had dinner I went for a run??.(well I'm starting C25k over again just to recondition. It is nice to do something that feels good but doesn't challenge me too much). Do you like my BRIGHT yellow tank? It could probably glow in the dark :)
Later last night I did 30 minutes of yoga to try and stretch out and had to do my homework from bootcamp: 10 push ups, 20 sit ups and a 30 second plank. You would think "that's easy Apes" but guess what?!?!?! IT WASN'T and I had to struggle but at the end of the night I crashed like a ton of bricks and slept like a baby until my alarm sounded at 5am this morning :)
I think that is it for now...
