On my walk with Terri earlier this week...we got to talking about Yogurt and I was telling her how I couldn't get into the whole greek yogurt thing. She suggested I try the Chobani Peach. So...I did :) I had it with 1/2 C. Kashi Go Lean Crunch and it was really good. Not AMAZING but good and b/c of the 12 g of protein? I was full for most of the morning. I think I'll try it again :)
Breakfast #2 was a (not so) Green Monster. I swear there are like 3 cups of spinach in here...along with some blueberries, banana and yogurt. Mmmmmmm
LOVE! that our cups are made from Plants and compostable. I may not be super green but that doesn't mean I don't find things like this fascinating :)Lunch was this Salmon Salad (at my desk) Just a bunch of veggies with balsamic and a salmon fillet on top.
Snack? Banana, I'm loving banana's lately. They usually don't do too much for me but lately I'm lovin em.
Then comes the crock pot magic!!! This morning I decided to try something new. I layered the crockpot with about 5 halfed yukon gold potatoes, a half of a bag of baby carrots then I cut a lemon and put that inside the cavity of a whole chicken and put the whole chicken on top. I rubbed EVOO with S&P, Rosemary, Poultry Seasoning and Thyme on the top of the bird, set the crock pot to low and that was it!
I wasn't sure how this was gonna work out. I don't really care about the skin so I don't care if it is soggy. I was just wondering if (a) the chicken was going to cook through and (b) was the chicken going to turn to mush bones and all?!? It was in there for like 9 hours and all the recipes I'd seen said to let it cook for 4-6 on low so I was worried but...
I'm happy to report that it turned out DELICIOUS!!! The chicken had a nice citrus flavor from the lemon and the veggies were outstanding! The skin was soggy but I just pulled it off. It literally fell off the bone. When we held up a drumstick, the bone just came right out. This is TOTALLY getting made again!!! The kids didn't eat it but oh well...their loss :)
After dinner I cleaned up and played with the kiddos then I put on my jammies (BAD APRIL). And all this after I had given my mom a pep talk about going to the gym. Here I was going to bail out of running...
THANKFULLY, one of my walking ladies, Lynn, messaged me to ask if I was walking and I couldn't say no!!! SO I pulled up my big girl panties, got dressed, grabbed Rocky with his leash and hit the road for a mile run before I met up with the girls to walk 2 more. YAY ME! I was happy Lynn messaged to get my butt movin otherwise I'd have been a lazy bum.
Lesson!?! Create a support system that helps keep you motiviated even when it doesn't come from within!
